Serve these garlic, lime, and herb roasted chicken breasts any night of the week for
a fast, easy and delicious meal.
2 chicken breasts with back attached
2 tbsp fresh lime juice
2 tbsp extra-virgin olive oil
1/2 tbsp minced fresh ginger
1/2 tbsp dried oregano leaves
1 tsp dried rosemary leaves
2 large cloves garlic, finely minced
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
Lime wedges (optional)
Preheat the oven to 425 degrees F.
Place the chicken breasts in a shallow baking dish lined with parchment paper. Mix together the lime juice, olive oil, ginger, oregano, rosemary, garlic, salt, and black pepper. Pour the mixture over the chicken and bake for 40 to 45 minutes. Serve with a wedge or two of lime squeezed onto the chicken, if desired.
