These navy bean, sweet potato, brown rice, and peanut burgers topped with peanut butter sauce are delicious and filling, I’d recommend them for dinner anytime. These burgers can also be served in buns with toppings of your choice, mayo, mustard, ketchup, lettuce, tomato, avocado, and/or onions. Adapted from Healthy Happy Life 100% Vegan.
1 cup mashed sweet potato
1/2 cup cooked brown basmati rice
1 1/2 cups cooked navy beans, mashed
3/4 cup roasted peanuts, ground in a food processor
1 1/2 tbsp Barbeque Spice Blend
3 Tbsp Date Sweetened Barbeque Sauce
1/4 cup onion, diced
1 Tbsp parsley flakes
1/4 tsp black pepper
1/2 tsp garlic powder
1/4 tsp Cajun seasoning
Peanut Butter Sauce
Preheat the oven to 425 degrees F.
In a large bowl combine the mashed sweet potato, brown rice, navy beans, ground peanuts, barbeque spice blend, barbeque sauce, onion, parsley, pepper, garlic, and Cajun seasoning. Mix well.
Line a baking sheet with parchment paper. Form sweet potato/bean mixture into 6 burgers and bake for 30 minutes.
Serve with peanut butter sauce, or on a bun with vegan mayo and the toppings of your choice.
