This recipe is full of cheesy-like ingredients, cashew nuts and nutritional yeast.
With the addition of a few other ingredients it tastes like a smoked spreadable cheese. Enjoy on crackers at your next party, or serve as an appetizer this Christmas.


1 cup raw cashews, soaked overnight
1/2 tsp sea salt
1 cup nutritional yeast
1 tbsp Tahini
1 tbsp extra virgin olive oil
1 tsp apple cider vinegar
1/2 tsp liquid smoke
1 tsp Dijon mustard
Water for soaking cashews

Place the cashews in a 2 cup measure, cover the nuts with water and let soak overnight; drain and rinse in the morning.

To a food processor add the drained cashews, salt, nutritional yeast, tahini, olive oil, apple cider vinegar, liquid smoke, and Dijon mustard. Process the cashew mixture until it’s smooth and doughy.

Place the cashew cheese mixture in small bowl or ramekin, press and smooth out the surface to create a firm cheese block. Cover and let sit in the refrigerator overnight to set.

Serve with crackers. Makes 6 servings
