This raspberry sauce is the perfect addition to any dessert. Serve it with chocolate cake, cheesecake, and/or ice-cream. It’s an easy way to dress up any dessert.


4 cups raspberries, fresh or frozen
1/2 cup sugar
1 tsp grated orange zest
1 tsp vanilla (optional)

In the bowl of a food processor, place raspberries, and sugar. Blend until pureed.

Place a fine-meshed strainer over a bowl, and pour some of the berry mixture into the strainer to remove the seeds, press down with a spoon to force the fruit and juices through the strainer, repeat until all of the raspberry mixture has been strained through.

Transfer the raspberry coulis to a glass container and add the orange zest and vanilla, if using. Refrigerate until ready to serve.

The puree will keep well for up to a week in the refrigerator.
