This quick and easy to make recipe can be scaled to feed any number of hungry mouths. It’s the perfect dessert to serve after a large meal.


2 gala or red delicious apples, rinsed
1/4 – 1/2 cup Green Tomato Mincemeat
1/2 cup orange juice
2 tsp vegan butter (optional)

Preheat the oven to 375 degrees F.

With a melon baller, remove the apple cores, making sure not to go all the way through the apples. Fill each apple core with mincemeat.

Pour orange juice into a casserole dish and place apples right side up. Place a teaspoon of butter on top of the mincemeat in the apples, if desired. Bake for 50 minutes.

Serve warm.
