A mixture of brown rice, black beans, corn, and roasted red peppers. Add this to any meal, whether it’s to a salad, added to soup, or to a main course.
Can be made ahead and frozen.

Brown-Rice-and-Black-Bean-Medley

Ingredients:
1 cup Organic Brown Rice
1 can Organic Black Beans, rinsed
1 cup Organic Sweet Corn, cooked
1 Organic Roasted Red Bell Pepper, chopped

Directions:
Cook the Brown rice according to the package directions. Mix together the rice, black beans, corn, and roasted red peppers. Store medley in the refrigerator until ready to use or freeze in 1 or 2 cup containers for later use.
