For health reasons I have decided to do a 6 week experiment and eliminate meat, eggs, dairy, gluten, refined sugar and as much oil as possible from my diet. I basically want to see if my digestive issues will be helped by a change in diet and losing a few pounds wouldn’t hurt either.

So for the next 6 weeks or more I am going to follow a low fat vegan diet, and I will be posting recipes once I get the hang of this new diet.
