A super simple recipe that has wonderful flavour. The roasted chicken is marinaded in garlic, soy sauce, ginger, citrus, and honey. Serve it with rice and at least 2 veggies.
2 tbsp honey
1 tbsp fresh ginger, peeled and minced
1/2 tbsp fresh lemon juice
1/2 tbsp apple cider vinegar
1 tbsp gluten free soy sauce
1 tsp sesame oil
2 tsp light olive oil
1 tsp orange zest
2 garlic cloves, minced
1/8 tsp black pepper
3 – 4 chicken breasts, boneless and skinless
Preheat the oven to 425 degrees F. Spray a baking dish with cooking oil, and set aside.
Combine first 10 ingredients in a small bowl and stir well. Place the chicken breasts in the prepared dish and pour honey/ginger sauce over the chicken, tossing to coat.
Bake for 20 minute, remove from the oven and spoon some of the sauce from the pan over the chicken breasts. Return the chicken to the oven and continue to bake for an additional 20 minutes.
Serve with rice and veggies.
