This delicious side dish is full of flavour and pairs well with any chicken, fish, beef, or vegan dish.


1 head of cauliflower
1 cup mushrooms, finely chopped
1/4 cup onions, finely chopped
2 tablespoon olive oil
1/2 tsp salt
1/4 tsp pepper
1 tbsp Italian seasoning

Remove the outer leaves and stem from the cauliflower, and chop it into florets, then shred the cauliflower using a food processor.

Heat the olive oil in a large skillet over medium heat, and saute the mushrooms and onions for about 3 – 5 minutes.

Add the shredded cauliflower, Italian seasoning, salt and pepper to the skillet. Saute for about 5 minutes or until the cauliflower begins to become translucent, stir often so it cooks evenly.

Place the cooked mushroom cauliflower rice into a serving bowl and serve with your choice of protein.
