Roasted cauliflower with a dairy free feta made with ground almonds and topped with sun-dried tomatoes.
1/2 large head of Cauliflower
1 tbsp Extra Virgin Olive Oil
1 clove Garlic, chopped
1/4 cup Almond Feta cheese, crumbled
Sun-dried Tomato Topping* (recipe below)
Preheat the oven to 425 degrees F.
Wash and separate the cauliflower florets and place in a large glass bowl. Add the olive oil and garlic, toss lightly.
Place the cauliflower on a baking sheet in a single layer and roast in the oven for 20 – 25 minutes or until the cauliflower is brown on the edges.
Remove the cauliflower and place back in the bowl. Add the almond feta cheese and mix together.
Place the cauliflower and feta back on the baking sheet and bake for an additional 5 – 10 minutes.
Transfer the cauliflower/almond feta mixture to a large bowl and top with the sun-dried tomato mixture. Serve
Sun-dried Tomato Topping*
1 tbsp olive oil
1/2 tbsp Italian Herbs
2 tbsp chopped sun dried tomatoes
Mix the oil, Italian herbs, and sun dried tomatoes together, and set aside until ready to serve.
