I served these burgers on sweet potato pancakes topped with bacon and mayo, and a side of roasted carrot and parsnip fries. Enjoy!


1 lb ground chicken
8 slices bacon, divided
1/2 cup shredded sweet potato
1 granny smith apple, peeled and shredded
2 tbsp onion, finely chopped
1 egg
1/2 tsp Cajun seasoning
1/4 tsp salt
1/4 tsp pepper
mayo (for garnish)

In a large frying pan, cook the bacon until crisp. Remove the bacon and drain on a couple of sheet of paper towels. Chop 4 slices of the bacon for the burgers, set aside the remaining 4 slices for garnishing your burgers.

In a large bowl, combine chicken with chopped bacon, sweet potato, apple, onion, egg, Cajun seasoning, salt, and pepper. Form into 4 patties.

Cook the burgers in bacon fat (or coconut oil) for 7 minutes per side; or until cooked through. Serve on a bed of lettuce or with Sweet Potato Pancakes. Serves 4
