A simple flavourful one-dish meal, that’s so easy to prepare. This recipe is so versatile, you can use whatever veggies you have on hand, and whatever brand or kind of hummus you like.


1 cup broccoli, florets
1 cup cauliflower florets
1 cup mushrooms, quartered
2 tbsp onions, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp herbs De Provence, divided
3 chicken breasts
1/2 lemon, juiced
1/2 cup hummus (I used this recipe Roasted Red Pepper Hummus)
1/4 tsp smoked paprika
Drizzle of balsamic vinegar
salt and pepper to taste

Preheat oven to 425. Line a baking dish with parchment paper or aluminum foil, grease and set aside.

In a medium bowl, mix together the broccoli, cauliflower, mushrooms, onions, and garlic with 2 tbsp olive oil. Spread the in the bottom of a baking dish. Season with 1/2 tbsp of herbs De Provence.

Place the chicken breasts on top of the veggies, and cover the meat with the hummus. Season with the remaining 1/2 tbsp of herbs De Provence. Drizzle with balsamic vinegar and lemon juice. Sprinkle with smoked paprika, salt and pepper. Bake about 40 minutes until chicken is cooked and veggies are roasted.
