Chocolate and orange blend beautifully in these no-bake bites, creating a delicious cookie.
2 cups crushed gluten free vanilla wafers
2 cups confectioner’s sugar, divided
1 cup ground almonds
4 tablespoons baking cocoa
4 tablespoons fresh orange juice
4 tablespoons corn syrup
zest from 1 orange
In a large bowl, combine the vanilla wafer crumbs, 1 cup confectioner’s sugar, almonds and cocoa. Combine the orange juice, corn syrup and zest; stir into the crumb mixture until blended. Place the mixture in the freezer and chill for 30 minutes.
Shape into 1 inch balls and roll in the remaining 1 cup confectioner’s sugar. Place the balls back in the freezer and chill for another 30 minutes. Remove the balls from the freezer and roll them in the confectioner’s sugar again. Store in a single layer in an airtight container in the fridge or freezer. You may need to re-roll in confectioner’s sugar again just before serving.
