These no-bake almond bites are quick and easy to assemble and taste delicious with just a hint of chocolate and almond.
2 cups gluten free vanilla wafers
2 cups confectioners’ sugar, divided
1 cup ground almonds
4 tablespoons baking cocoa
4 tablespoons apple juice
4 tablespoons corn syrup
1/2 teaspoon almond extract
In a large bowl, combine the vanilla wafer crumbs, 1 cup confectioner’s sugar, almonds and cocoa. Combine the apple juice, corn syrup and extract; stir into crumb mixture until blended. Place the mixture in the freezer and chill for 30 minutes.
Shape into 1 inch balls and roll in the remaining 1 cup confectioner’s sugar. Place the balls back in the freezer and chill for another 30 minutes. Remove the balls from the freezer and roll them in the confectioner’s sugar again. Store in a single layer in an airtight container in the fridge or freezer. You may need to reroll in confectioner’s sugar again just before serving.
