These ginger cookies are easy and quick to make, especially if you always keep some white rice flour blend on hand. And they are so good.

3/4 cup oil
1 cup white sugar
1 egg
1/4 cup molasses
2  1/2 – 2  3/4 cups white rice flour blend
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp salt

Preheat oven to 350 degrees F.

In a medium bowl mix together flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.

To a large bowl add oil, sugar, and egg; mix well and add molasses stirring to combine.

Add the flour spice mixture and stir to combine.

Roll 1 tsp of dough into a ball and coat with sugar, place on cookie sheet. Do not press down.

Bake for 10 – 12 minutes. Remove from oven and let sit for a minute or two before removing the cookies to a wire rack. Cool

Note: Start with 2 1/2 cups of the white rice flour blend and bake a couple of test cookies, if they don’t look like the picture and spread out too much add the extra 1/4 cup of flour.
